Darling tofu bites
Sticky, salty, chewy bites of spicy tofu – it's definetly a darling recipe!
For whatever reason, it has been the summer of tofu. I've found all sorts of new and exciting ways to eat this protein, amino acid and vital mineral rich ingredient.
I spotted this easy peasy recipe in a Reel by the sweet and inspiring Maya @fitgreenmind and I've already served it as a salad topping as well as a side-dish and a snack. The spices are easy to vary, and the result changes depending on what type of tofu you use. It's just a fun and quick recipe to play around with!
Everybody's darling tofu bites
400 g (extra) firm tofu
3 tsb potato starch (OG recipe uses 2 tbsp corn starch)
2 tbsp curry powder
salt, to taste
1/2 tbsp oil
4 tbsp teriyaki or bbq sauce
Set oven to 200°C
Pat the tofu dry and tear chunks off. Patting it dry will make it crispier in the end, and tearing will allow for it to soak up more coating and more flavour.
Toss the tofu in oil. Combine starch, curry powder and salt, and mix in with the tofu. Make sure all the pieces are coverd. Scatter the tofu on a bake tray lined with baking parchment, bake for 15-20 minutes.
Take out the tofu and place the pieces back in the bowl – top with teriyaki or bbq sauce as well as the juice from 1/2 lime. You can be creative with the coating, but a thicker, stickier sauce will make the tofu crispier.
Bake for 5-10 more minutes, until the tofu is crispy.
