Comfort food: Pureed courgette and potato soup


Potato soup? Yes, please! 

I might have mentioned I love potato and this simple soup is satisfyingly starchy and gets a nice texture from the courgettes. It's also cheap to make and is absolutely delicious.

Whenever we have made this soup for friends of family we have had to give them the recipe, too!

Courgette and potato soup

About 500g potatoes
About 500g courgette
1 onion
2 garlic cloves
Olive oil
1 litre water and organic vegetable stock cubes
Salt, white pepper
Herbs: thyme, parsley, basil or chives work really well

Chop onion and garlic. Cube the potatoes and courgettes into small cubes.

In the pot, sauté the onion and garlic with oil until the onion is transparent. Add the cubed potatoes and keep frying for about five minutes. Add the courgettes last and top with water and the stock cubes and bring to a boil.

Let it simmer until the vegetables are soft enough to blend, about 15-20 minutes.

Purée the soup with a stick blender. I like to leave some chunks so it's not too much like baby food. Add herbs, salt and pepper to taste.
